Bouley: Definitive French-American Cuisine

Forager’s Treasure of Wild Mushrooms: Sweet Garlic, Special Spices, Grilled Toro Black Truffle Dressing at BouleyHello all! I was lucky to try Bouley in October 2014 for some amazing French food. I would characterize it as an organically-focused, creative, and less pretentious version of Jean-Georges. Bouley, like many top-tier French restaurants, serves dishes based on the best ingredients for the season. To start, we ordered an appetizer and an entree each. Steph got the Forager's Treasure of Wild Mushrooms with Sweet Garlic, Special Spices, Grilled Toro, and Black Truffle Dressing. Look at it. It looks so exotic like the surface of an alien planet with all that foam and foliage. The toro (tuna belly) was cooked perfectly. For her entree, Steph got the Organic Colorado Rack of Lamb, sheep's milk gnocchi, soubise of cippolini, and zucchini mint puree. I can't talk too much about her dish because I only tasted a bit of it. There was a small lamb chop with three medallions of tender meat. I think the three medallions might have been cooked sous-vide because there was no char and the meat was fully rare throughout. For some reason, the lamb didn't taste overly gamey, which means the lamb was either seasoned really well or was low in aromatic fat. 


Porcini Flan: Alaska Live Dungeness Crab, Black Truffle DashiI got the Porcini flan, which came with Alaska Live Dungeness Crab and Black Truffle Dashi. OK. It looks kind of ugly but trust me, it's delicious. Porcini is a great mushroom. It's multi-faceted in that you can add it to practically anything. It's gentle enough to add a delicate flavor to a flan or sauce but it's robust enough to uphold its flavor against steak or a full-bodied wine. The Dungeness Crab was succulent and sweet in flavor. It's considered to be sweeter than snow crab and it doesn't have a strong ocean scent. If you want to impress your friends, make them some Dungeness crab. You can get it practically anywhere... even on Amazon. But, of course, I don't really recommend getting it on Amazon.



Organic Long Island Duck: Organic Golden Nevada Dates, Hudson Valley Hand Milled Polenta at BouleyFor my entree, I got the Organic Long Island Duck with Organic Dates and Hudson Valley Hand Milled Polenta. I really liked this one. It was like 15 little flavor bombs. The meat was fresh and pure. The fat practically melted in my mouth. The dates were a great addition because it gave the duck a prominent sweet flavor. To me, dates taste more like honey than berries. I don't know why. Anyways, dates are extremely healthy for you. Actually, they've got all the important vitamins you want in your life. It has Vitamin A for your eyes, Vitamin K for your bones, and Potassium for your blood pressure. They're also high in fiber, which helps flush out the bad bacteria in your system. 


Organic Colorado Lamb: Tuscan olives, cured lemons at BouleyAside from the snide comments and scoffs from the closed-minded, middle-aged woman sitting next to us as we were taking these beautiful food pictures, we enjoyed our meal. Don't look at us with those judgmental eyes! If you have time to ridicule us, you clearly aren't focusing on enjoying your food. 

SECRET TIP: Go for their lunch prix fixe. It's only $55 for 5 courses ;) One of the most affordable in the city!
